My cousin was into the competitive eating thing. He was a member of the International Federation of Competitive eaters. They had him eating these bulls testicles at this one competition. It was insane. It was a plate full of prairie oysters or bulls balls. My cousin, wanting to keep his statistics up, ate 'em up. He just gobbled them up. I'm not kidding.
The "old timer" Basques in our area eat them off of sheep.

Did he say what they taste like? texture?
I don't know about prairie oysters, but actors/motorcycling legends Ewan McGregor and Charley Boorman had some sort of cow & sheep testicle stew while travelling through Mongolia.

They're made of stronger stuff than I!
Once while drunk at a Colorado Rockies baseball game I ate a few of them. Not sure I would try them again as they had a strong flavor which to me was reminiscent of liver.
