Hi gang, Hi Brutus.
This is a simple receipe, so simple a caveman can do it... its no bake and goes like this.

One stick of Creamcheese, 8oz
One can of sweetened condensed milk, 14oz
1/3 cup lemon juice
1 teaspoon vanilla
Whip in a bowl with a blender.

The crust is simple
1 cup graham cracker crumbs
3 tablespoons sugar
1/4 cup butter, melted
Combine crumbs, sugar, and butter; press onto bottom of 9-inch pan.

Pour the cheesemix into the crust.
One can of cherries to cover.

Your done!

I have tried this reciepe with no-name brands vs brand names.
It is worth the extra dough to get the brand names.
If you really slack, you can just buy a premade graham crust, but they are not as good as making your own. Don't be slack, go the extra mile.

This is my favorite dessert.
I love the way the lemon counters the sweetened condensed milk.

My Mom used to make a no bake cheescake similar to this one. I think my first job in the kitchen was smashing the graham crackers for the crust with a rolling pin. What fun, and what a mess I made!

Diabetic version--- I make this for a family member who doesn't have to take the shots, but manages with watching the foods he eats.

1 8 inch-9 inch low sugar graham cracker pie shell
1 8 oz package lower fat cream cheese -softened
1 small package of sugar free instant pudding mix (vanilla flavor)
1/4 cup sour cream
1/2 tsp. vanilla extract
1 TBSP milk
1 12 oz container of sugar free cool whip.

In a mixer beat the cream cheese pudding mix , extract and milk. Fold in the sour cream and cool whip then pour into the pie shell. Chill over nite. I'll serve it with fresh fruit i.e. sliced strawberries, blueberries, or blackberries.

Thats why I love this simple receipe, because Mom used to make this version.

Since my mom was diabetic later in life the second receipe is much appreciated.
