I have been making this dish for years. I love it and I hope that you will too.
4 boneless chicken breast
2-3 medium green bell peppers, sliced into strips
2-3 medium carrots, sliced into strips
1-2 medium onions, sliced into strips
1 20oz can of chunk pineapple (or if you prefer, you can get a pineapple and cut it yourself for a more fresher taste)
If you have a wok or other large frying pan. Heat olive oil to medium high.
Cut the chicken into chunks breading them in a flour and Bisquik mixture placing them gently into your wok or pan.
The bell peppers, onions and carrots are added just as the chicken is begining to brown.
Let this fry until chicken is almost done, then add the pineapple chunks into the wok or pan.
Fry for another 2-3 minutes
Serve with rice or another of your favorite foods.
Serves about 4-6 people
