Let me first admit that it's probable that I have mis managed in filing this thread correctly. A work in progress.

The Spiedi. Marinated chicken, beef or pork grilled over an open flame. Nope not shishkabob, Spiedies, because the chicken is generally smaller in size than the shishkabob and there is no veggies. Ten to fifteen raw seriously marinated pieces of select cut are put on a scure (spelling) and grilled.
Sounds good and all but heres the thing. Its a huge success up here and every year we hold the "Broome county spiedi fest". Its a weekend thing that brings in like 40,000 people from all over and all they talk about is these "spiedies". Possible menu item or outside grill item?

And for the sales, I can see it, Bubba Classic Marinade. displayed in the shape of a huge kit or a motorcycle.

That marinating sauce " speidies " (sp) is available in my area Northern NY and i use it in the summer when i grill some chicken or pork look for it in the salad dressing / bbq sauce area of your local store its good stuff!!!
Any homemade recipe for the marinating sauce?
If you google or search Lupos Spiedi , you will find numerous various marinades, meats, spiedi gift sets and everything spiedi. Goodluck!!

SERVES 3 -4 (change servings and units)
Ingredients
2-3 chicken breasts
1/3 cup olive oil
1/4 cup lemon juice
1/4 cup white vinegar
2 garlic cloves (finely chopped or pressed)
1 tablespoon dried parsley
1 tablespoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon garlic salt
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
3-4 sandwich buns
Directions
1Dice chicken breasts into 1" cubes.
2Whisk all other ingredients together to form marinade. Set some aside for basting or sauce if desired (though I don't think this is necessary).
3Add marinade to chicken and refrigerate overnight, stirring occasionally (the acidic nature of the marinade will 'chemically' cook the meat partially).
4Thread 5 or so cubes onto metal or soaked bamboo skewers and grill for a few minutes either side, just until meat is firm (remember, they're already partially cooked by the marinade).
5Place two skewers on a fresh bread roll or Italian bread, grip the meat firmly with the bread and pull out skewers.
6Enjoy!
