Quinoa is one of my favourite things because it is just so good for you. It can be dull though... I did a bit of searching and this is currently my favourite quinoa recipe (though I am always working on the next big one).

Take 2 cups of quinoa, rinse in a sieve and then place in a saucepan with 3 cups of water and a teaspoon of garam masala. Bring to the boil and then leave to simmer until the water has evaporated and the quinoa has got those little tendril things going on...

Meanwhile, slice a pepper (colour of your choice) and 2 sticks of celery and fry in a teaspoon of garam masala. I do this in a wok so that I don't have to use oil but you could if you wanted to - a nut oil is probably best for this. After approximately two minutes, throw in 5 sliced spring onions and fry for another minute or so.

Place quinoa in a serving bowl and gently stir in the fried veg. Add a cup of raisins/sultanas (I use whatever dried fruit is in the cupboard... sour cherries are particularly good) and half a cup of sliced almonds.

Serve either warm or put in the fridge for a few hours. Will keep for a couple of days unless I am around and then it wont stand a chance... Big Grin
