8oz plain flour
2.5 oz sugar
2 tsp baking powder
0.5 tsp bicarbonate of soda
0.25 tsp salt
5 tbsp rapeseed oil
6 fl oz soy milk
6 oz soy yoghurt
2 tsp almond extract
4 oz sliced almonds
4.5 oz fresh cherries, pitted and halved

Mix flour, sugar, baking powder, bicarb, and salt. Add oil, milk, yoghurt, and almond extract and combine. Fold in almonds and cherries. Place in muffin cases and bake at 400f for about 20 minutes.

So nice.
