Hey everyone, My apologies... I am new to this cyber posting. I thought it all worked and I am not getting notifications. Need to fix that.. My second post worked, but I didn't even think to check this one... Here is the recipe: On Pork tenderloin. When you open the package it will seem like two...you will simply tie them together with cooking twine. Take a knife and make slits in the meat for your dried apricots and garlic cloves. Stuff as much into the meat as you possibly can. Tie the two loin halves together. My marinade is Dijon mustard, fresh rosemary, olive oil, port, shallot, garlic, kosher salt and fresh black pepper... you could use apple or organge juice if you don't want to go with the port, a little white balsamic is good too. You could also vary your herbs... Extra dried apricots chopped will also flavor your marinade. Save half for basting while grilling... Grill to desired doneness... Don't cook the living daylights out of it or it will be dry! Keep turning it for even cooking. I grill on med direct and then slide to indirect heat for about 20 min total. Use a meat thermometer.
