Tonight’s dinner, Mac & Cheese.

But not just humble Mac & Cheese, oh no.
It was Mac & Cheese (homemade cheese sauce) with Ham, broccoli, and green onions mixed in.
A nice bake in the oven with more cheese on top, very scrummy!
(Scrumptious + Yummy= Scrummy)

This leads me to my question:
How do you Mac & Cheese?
Plain from the box?
Homemade all the way?
Do you add anything? Hot Dogs? Kielbasa? Peanut Butter? (Don’t laugh, it may be good!)
Home made. Everything you listed above... 'cept hot dogs and peanut butter.
I'll do the homemade sauce, but put more than 1 cheese type in. Cheddar or colby is generally the "orange" cheese and what ever I have on hand is used. My Grandmother would put in white onions chopped fine and at the end just before serving put some either fresh or frozen peas in and let the heat cook them.
I make mine homemade all the way. My daughter had book by the American Girl company titled, "Kit's Friendship Fun" and there was, what turned out to be THE favorite mac & cheese of the kids. I don't put anything in it, because the kids don't necessarily like embellished mac & cheese. The cheese sauce is sooooooooooooo good. I've made the sauce for fondue as well.

Mmmmm, recipe please?

My kids call this "Kit Mac & Cheese" (I'm copying it as it was written in the book, which was probably geared toward 7-10 year old girls).

Ingredients:
1 stick of butter
2C of macaroni (I like to use shells)
2 1/4 C of milk
4 TBSP of flour
1/2 tsp of salt
1/4 tsp pepper
2 C grated cheddar cheese (I tend to add more, and even throw in some sharp cheddar)
1/2 C of bread crumbs

-Preheat over to 375 degrees, grease casserole dish with 1 TBSP butter (or spray)
-Boil the 2 C of noodles about 8 minutes, drain & set aside
-In a saucepan, heat the milk on med. high, stirring until steaming hot but not boiling, then remove milk from heat
-Melt 4TBSP of butter on low, then stir in the flour, salt & pepper.
-Add hot milk to butter mixture, turn on med. high, stirring constantly
-Add 1 1/2 C (or more if you like) of the grated cheese until cheese is melted & remove from heat.
-Put half of the noodles in casserole dish, cover with half of the cheese sauce. Sprinkle with 1/4 C of grated cheese. Repeat with remaining noodles, sauce, & cheese.
-Mix bread crumbs w/melted butter, & sprinkle over mac & cheese.
-Bake, uncovered, for 25 minutes.
Mmmmm.. that looks great, Bageleth!

I start with a white sauce and add several kinds of cheese; medium cheddar, muenster, jack, Parmesan (just a bit) and Havarti. Then I add just a small amount of (gasp!) velveeta. It helps blend all the cheeses into a smoother sauce and adds a sweet note. If I'm feeling saucy (heh) I will add a couple of shakes of hot sauce. I pour this over elbow macaroni (holds the sauce best, I find) and bake for 30 minutes. Then I sprinkle some cheddar and panko over the top and bake for a few more minutes until its GBD. Even my fussy daughter will eat it Big Grin
