Over Christmas my brother and his family were visiting, and my brother made kale chips. And the kids went MAD for them. I have to admit, they're rather addictive. Different...
Wash some kale, however much you want. Cut the stems off and discard. Cut the leaves into chip-sized pieces. Coat lightly with olive oil and salt. Spread out on cookie sheets. Spread them out so that they are able to dry out - don't place in clumps. Place the cookie sheets in a pre-heated 250* oven, and bake for approximately 25 minutes. The "chips" should dry out completely, and be crispy. Move to a bowl, and enjoy!
