Spongecake!

This is from the 1932 edition of the Settlement cookbook, except that I
changed the directions a bit(clarified things), and the oven temperature(it was too low for today's cooking).
4 eggs, separated
1 cup sugar sifted( I use organic)
3/4 cup water
1 1/2 cups unbleached flour
3 teaspoons baking powder
2 teaspoons vanilla

In mixing bowl, beat egg whites until stiff. Set aside.
Sift baking powder with the 1/2 cup of flour.
Beat egg yolks in a separate bowl until light and thick, add sugar gradually and continue beating. Add flavoring, the water, and the cup of flour (alternating the water and flour). Then add the baking powder mixture. Remove bowl from mixer, and fold in the egg whites by hand. Place in pan sprayed with cooking spray(bunny shaped pan, tube pan, or 13x9), or cupcake liners.
Cakes should bake from 25 to 30 minutes at 350 degrees.
Cupcakes from 15 to 20 minutes at 350 degrees.
Cake is done when a toothpick inserted in the center comes out clean.
Let cool.
Don't overbake the cupcakes, they will dry out.


Frost with your favorite frosting.
