Full Version: Cinnamon Apple Cake

I decided to post a recipe featuring a fruit from my native state of Washington: apples! This cake is a great alternative to anything layered and frosted, especially if you're taking it to a gathering.

Preheat oven to 350 F

1 3/4 cups sugar, divided
1/2 cup stick butter or margarine
1 tsp vanilla extract
6 oz block style cream cheese (fat-free works fine), softened
2 large eggs
1 1/2 cups all purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp ground cinnamon
3 cups peeled, chopped apples (any good baking apple that holds it's shape)
Cooking spray

Beat 1 1/2 cups sugar, butter, vanilla, and cream cheese at medium speed until well blended (about 4 minutes). Add eggs, one at a time, blending well after each addition. Combine flour, baking powder, and salt, then add to wet ingredients, mixing on low until well blended.

Combine remaining 1/4 cup sugar and cinnamon. Toss apples in 2 tbsp of cinnamon/ sugar mixture, then stir apples into batter. Pour batter into an 8 inch springform pan coated with cooking spray, then sprinkle with remaining cinnamon mixture.

Bake for 1 hour 15 minutes or until the cake pulls away from the sides of the pan. Cool completely on a wire rack, remove sides of pan, cut with a serrated knife. This cake is very tender and will crush if cut with a smooth blade.

You can use a 9 inch springform or square pan, just reduce baking time by 5 minutes.
This sounds soooo goood! I can't wait to try this one. The cream cheese in this recipe is different. I didn't expect to see that in the ingredient list. I think I'll use my favorite apple for this, Gala. I'll let you know how it turns out.

I look forward to it! I've used Gala, Granny Smith, Gravenstein, Fuji, pretty much any apple that doesn't become applesauce when cooked. It takes 2-3 apples, so I usually use a combination of whatever I find at the farmer's market.

This cake is very moist, with a very fine crumb, and I suspect the cream cheese is the reason.
