Since Brutus brought the topic up in another thread, I have been reminded that i would love to learn how to make haggis. I know, most people turn up their noses at that particular culinary delight, but there is something about it that I just love. Unfortunately, it is very difficult to find in these parts (Pittsburgh), and I am usually relegated to a once- or twice-a-year feast at some regional highland games. I would love to learn how to make it at home. Can anybody share a recipe? Thanks!

I won't eat haggis, and in fact turned it down while in Scotland, but I did buy a Scottish cookbook during my trip. I'm fairly certain it had a haggis recipe, so I'll have a look. If it does, I'll post the recipe and give you the book's name and author. I've cooked non haggis recipes from it and everything was wonderful. I just can't get up the courage to try that particular food. Big Grin
Now you're talking! Haggis, Scottish eggs and wash it down with a pint of Guinness or other dark ale from the Isles...

Hopefully you can find the recipe(s) as there's a couple of different ways I've had it. Both are very good. Smile

I was in Edinburgh this past December. I wanted to try Haggis but was not sure what place in Edinburgh would have the best tasting. Didn't want a bad experience with it. The chips and gravy is yummy though.
I tried but was unsuccessful in finding the joke by a Scot comedian where he prepares Haggis while at the same time downing bounteous quantities of single malt. It's hilarious. He begins his rant with the suggestion, "First you get a sheep." In lieu of that you could try this. And now I'm thinking that to counterbalance this thread I should consider opening one for the vegans in the crowd? But then again, if God wanted me to be a vegetarian, why did he invent meat?

Oh and I think the recipe below could be ammended to use suet instead of one of your suits.

a better Haggis
Prep Time 5 hours
Serves: 20
Ingredients:
1 1 Lamb Heart
2 Sheeps Lights (Lungs)
1 Sheeps Liver
6 Lamb Kidney
1 1/2 lb Oatmeal (mediam)
1/2 lb Suit (fine ground)
1/2 tablespoon nutmeg
1 oz tyme
1 teaspoon salt
1 tablespoon pepper
Steps:
1.1. Have your Butcher roughly grind the offal. place into a large mixing bowl with all the other ingredients. mix thoroughly with hands. 2. Stuff the mixture into the sheep's stomach not too full or it will explode when cooking. Sew the opening with string. I don't use sheep's stomach, sorry there's no way that I am putting my hand inside one of those. I use strong linen or muslin squares and tie them just like Christmas puddings. 3. Place into boiling water for 4 hours, Present to table, address with Robbie Burn's 'Ode to Haggis'. Cut and eat with neeps and tatties and a good drop of Malt Whisky 4. Proceed to get drunk on the rest of the whisky
Brutus, a vegetarian/vegan thread would definitely draw more folks in. I have a vegetarian husband, and we are raising vegetarian kids (though I still love the flavor and smell of cooked meat, I haven't eaten any in about 10 years), so I'm always looking for something interesting to cook for variety.

Agent 21, I'm looking forward to hearing about your experience with making Haggis and what you thought of it.
it sounds stupid but i think the thing that puts people off is thinking that they have to eat every part of it, wrong, you cut it open and just sample the meat inside, if it's seasoned well it can be fantastic although i wouldn't have every week! at least it's better than scotland's other quirky contribution, the deep fried mars bar! behave indeed.

waiter in a restaurant ask a customer," are you here for a special occasion?"
customer, "yes, i won 3rd prize in a robbie burns competition, a haggis dinner for two"
waiter, "what were the other prizes?"
customer " 2nd prizes was a haggis dinner for one and 1st prize was you didn't have to eat the haggis"
Do you all have a favorite whisky? Which do you like?

I was able to go to the Whisky Experience in Edinburgh. There was a room where they talked about the different regions of Scotland. Smelling and tasting. I ended up picking Speyside region Whisky "Glenfarclas." There was a barrel ride that took you through the distillery process (2% that evaporates is for the angels they say). They have one of the worlds biggest whisky collections as well.

It was a lot of fun and I was able to bring my son. If you're even in Edinburgh, make sure you hit up The Whisky Experience. It's a lot of fun and very informative.

I love me a good Scotch! Not much into Jack Daniels or others though. Just a good aged Scotch. Sadly, can't do too much of it anymore. But, might have some if the occasion presents itself.

Me either. Don't like Jack. Love me some of Scotland best though.

Surly you can have a dram here and there?
