My dear hubby likes trains, and went to a swap meet a while back. He brought me back a little picture frame, and inside that frame was a post card for the Burlington Route passenger rail service. Considering they haven’t done rail service for quite a long time (20’s? 30’s?)…anyway, there is a recipe on the postcard.
And here it is transcribed faithfully…. Quote….
This Is One Of The Recipes
Which Have Made Burlington Dining Car Service
So Genuinely Satisfying
Follow it carefully and you will have the finest
Thousand Island Dressing in the world.
Thousand Island Dressing
Two cups olive oil, yolks of three eggs, one half cup vinegar. Make this carefully into a smooth and well blended mayonnaise. It will take fully one half hour, but the success of the dressing depends on the mayonnaise.
Now stir in slowly one-half bottle of Chili sauce, until well mixed with mayonnaise. Then chop together (very fine) one bunch chives, three hard-boiled eggs, two pimentos and one half green pepper. Add paprika and salt to taste and mix well with the mayonnaise.
This will make one quart of dressing. If kept in a cool place it will keep for a long time.
It sounds pretty good! Probably much better than the commercial stuff made now, that’s for sure!
Does anybody have any favorite salad dressing recipes?
