For NWo.. This was a recipe from my maternal Great Grandmother
My Mom would make this when my Dad had gone hunting and gotten rabbit.
However she had a rabbit shaped cake pan(like the lamb ones) and would sometimes bake the loaf in that shape.
Rabbit Meatloaf
2 rabbits -deboned
1lb. Pork sausage
2 eggs
1/2 cup chopped onions
1 packaged sleeve of saltine crackers -crushed
1/2 teaspoon each of : salt, pepper, thyme
Cream - a small bit might be needed to help bind the meat mixture
Grind the rabbit in a meat grinder into a coarse texture. Place the rabbit, pork and remaining ingredients into a large bowl and mix well. Pat the meatloaf mixture into a greased bread loaf pan and bake @ 350 degrees for about 40-50 minutes until done.
