Between the hens and somebody giving Ren Man a dozen store-bought, I have 25 eggs in the fridge. We'll use up 9 tonight with Breakfast-for-dinner but that still leaves me a LOT.

Any recipes that call for lots of eggs?
My sponge cake recipe uses 4.
You could also crack them into ice cube containers and freeze them,
if you can't use them fast enough. Shy
If you want to freeze 'em, you should separate them first, and then package them up in recipe-sized batches (two works well). I don't have my Joy of Cooking handy, but I know you're supposed to add some sort of stabilizer to the whites, and break, but not beat, the yolks.

Angel-food cakes take lots of whites, and my cheesecake recipe takes eight (mostly whole, but also a couple of yolks), but I can't get to it before the weekend.

(And if you like hard-boiled eggs, you can cook them first, shell 'em, and then just freeze them like that.)
I hadn't thought of freezing them! If I hard boil them, do I freeze them in or out of the shell?

The cakes both sound good. If you get to the recipes, I'd love them. But if not, no worries... I'll hard boil and freeze.

A big batch of French Toast comes to my mind (Mmmmmmm), that is if not already covered in the mentioned Breakfast-for-dinner.

Shell them after they're cooked and before you freeze. You could even pop them into an egg carton to freeze, then store in a plastic bag.

Do a search for "angel-food cake" on Mr. Google, and you'll see tons: I'll scout around for the cheesecake recipe, which is in my card file in a box. Box is either where I'm moving to tomorrrow, or over at a friend's place and accessible. ;-)
How about a nice custard or if you have fuzzy children they are good raw and/or scrabmbled for their coats, hollandaise sauce and from the across the room Fireman says pickle them( I believe you'd need Google help for that or maybe HardwareGrl)
