This is a trick I learned in cooking class way back in high school. Apparently the core of the onion is where the bulb is most pungent, since that's where the layers gather most heavily. To cut the core out, simply slice a cone shape into the root end and take out the gathered part, leaving only the layers still together. Throw out the core, then slice and dice as desired. Without the core, no more tears.
