Does anyone (oh Suuuuunnnnnnsetttt!) have a good recipe for an old fashioned Christmas Roast Duck they'd be willing to share? Big Grin Big Grin Big Grin

I'm a less is more kinda guy when it comes to duck, so I prefer a simple preparation like this one. https://www.google.com/amp/s/www.epicurious.com/recipes/food/views/crisp-roast-duck-235744/amp

But if you want to get fancy you can de-construct the duck. Do the legs confit, then do the breasts with a concord sauce. https://food52.com/recipes/19317-duck-breasts-with-concord-sauce

And if you REALLY wanna go over the top, buy 2 extra legs and confit them. Then follow this recipe(throw a poached egg on top too) , https://www.google.com/amp/www.foodnetwork.com/recipes/food-network-kitchen/duck-hash-on-toasted-baguette-recipe3-1916721.amp and serve it along side the concord sauce breasts and the legs confit.

De nada.

I'd make 2 changes though.
1. Place the raw duck in the kitchen sink and slowly pour a whole tea kettle of boiling water over it and really tighten that skin up good.
2. Then follow the directions to the letter, except add 1Tbs sugar to that 2C water for the secondary blanch.
