For NWo.. This was a recipe from my maternal Great Grandmother
My Mom would make this when my Dad had gone hunting and gotten rabbit.
However she had a rabbit shaped cake pan(like the lamb ones) and would sometimes bake the loaf in that shape.


Rabbit Meatloaf

2 rabbits -deboned
1lb. Pork sausage
2 eggs
1/2 cup chopped onions
1 packaged sleeve of saltine crackers -crushed
1/2 teaspoon each of : salt, pepper, thyme
Cream - a small bit might be needed to help bind the meat mixture

Grind the rabbit in a meat grinder into a coarse texture. Place the rabbit, pork and remaining ingredients into a large bowl and mix well. Pat the meatloaf mixture into a greased bread loaf pan and bake @ 350 degrees for about 40-50 minutes until done.

Thanks 2Beers - I like recipes like this - all straightforward, and into the oven.

I will give it a go - although what are saltine crackers likely to be in the UK?

We bought whole bunnies for the longest time and only used the thighs for the main dish (confit), leaving those fabulous tenders to do what we pleased. My favorite is/ was Manhattan style rabbit chowder. W/ Saffron Tongue
Or as we'd sometimes call it "Hare In Glue" if it was New England style.

Is that the red or the white?

NWo..these are saltine crackers

You might have to use the English water crackers and then add a bit more salt to the recipe.

That sounds like a great recipe. I think the butcher shop where I buy rabbit would be willing to grind 'em up to order: I'm not sure which box I packed the meat grinder in when I hauled everything over to the storage locker....
