Chunky Cabbage Soup

Chunky Cabbage Soup
My mom makes this and it's yummers!

Chunky Cabbage Soup - 8 to 10 large servings
  • 1 lb. ground chuck
  • 1 medium onion chopped
  • 1/2 cup celery diced
  • 1/2 green pepper chopped
  • 2 T oil
  • 2 T salt (you can leave this out if you're on a sodium-restricted diet)
  • 2 T sugar
  • 1/4 t pepper
  • 1/2 t paprika
  • 1 - 28-oz can tomatoes
  • 4 C hot water
  • 2 5 1/2 oz cans tomato paste
  • 2 beef buillion cubes
  • 2-4 chili peppers (I use only 1)
  • 3 T chopped parsley
  • 2 c raw potatoes diced
  • 1 c raw carrot diced
  • 6-7 cups coarsely chopped cabbage (1 small head)
In large soup pot, saute beef, onion, celery, and green pepper in oil. Add remaining ingredients except cabbage and combine thoroughly. Simmer uncovered 1 hour, stirring occasionally. Remove chili peppers. Add cabbage. Simmer covered 1 hour longer. If too thick, add 1 - 2 cups water.

This is great to warm up to after being outside during a cold Canadian February.
