"2:00 AM Black beans and rice" - Cuban style baby:

1 lb dried black beans
6 cups water
1 cup chopped onion
1 cup chopped bell pepper
1 tablespoon minced garlic
1/2 cup olive oil
2 bay leaves
1 teaspoon salt
1/4 teaspoon pepper
1 1/2 pack (or full lb if you're me...) slice cooked and crumbled bacon
2 tablespoons red wine vinegar
2 cups cooked long-grain rice


Toppings:
Chopped green onion, chopped hard boiled eggs, sour cream

Directions: (you can always cheat with canned beans)

1 In a large stockpot cover beans with water and boil for 2 minutes.
2 Remove from heat and let stand for one hour.
3 Drain water and cover with fresh water (6 cups).
4 In a skillet saute the onions, bell pepper and garlic in oil for 5 minutes, until tender.
5 Add onion mixture and all remaining ingredients, except the red wine vinegar, to the beans and bring to a boil.
6 Reduce heat to simmer covered for 2 hours, until beans are tender.
7 Add more water if necessary.
8 At the last minute add the red wine vinegar, just before serving.
9 Serve with 2 cups of cooked rice.
10 Top with chopped green onions, chopped hard boiled eggs or sour cream.

I DO have recipes, but I'm too busy laughing at the title of your thread (I'll add the BKA "Rice 'n' Crap")!

Muffy, looooves me some black beans and rice. However, step #3 is a bit perplexing....how dost thou cover drained water with fresh water?! Tongue

My "Rice With Junk on it" isn't the same story as Neil's, (in Africa).

My rice "With Junk" is anything Hawaiian that includes Spam, white rice , and lots of seaweed.

I was just telling Mr. Matters about "rice with junk on it" last night Big Grin

Actually, it's not too bad as long as it's not the only choice you have. Unlike poor Bubba. But I was impressed with his grace regarding it - when it's all you can get, you just accept that and move on.

My "rice with junk on it" is my Guam pork:

1 pound cubed lean pork (I use loin). Saute this in a tiny amount of sesame oil, then add:

1 cup soy sauce
1 tbsp mustard
1/4 cup brown sugar
1/4 cup rice vinegar

Bring to a simmer and cook for 10 minutes. Add thickener (I use cornstarch). When the sauce is thick to your preference, serve over rice. Voila! Rice with Junk On It a la Bubba's B&G. Wink

um ...you drain the water off the beans if you were soaking them, and then you fill the pot with fresh water.

A franchise based in Oregon has a sauce that we add to our rice (along with avacado, tomatoes, olives and cilantro). Once we discovered that sauce, it became the "junk" for the rice.
