BLT Pasta Salad

I made this recipe this past weekend while we were camping. Of course it was good...it had bacon in it

BLT Pasta Salad with Creamy Bacon Dressing

Cook:
1 pound pasta of your choice
1 pound thick-sliced bacon, diced

Whisk:
1/2 cup mayonnaise
2 tablespoons minced shallots
2 tablespoons minced fresh basil
2 tablespoons cider vinegar
2 teaspoons sugar
salt and black pepper to taste

Stir in:
4 cups chopped romaine lettuce
4 cups halved grape tomatoes

Cook pasta according to package directions. Transfer pasta to bowl of ice water (shocking it in an ice bath stops the cooking process and keeps the pasta from getting soggy in the salad). Drain well.
Cook bacon over medium heat until crisp. Transfer to paper towel-lined plate. Reserve 3 tablespoons of the drippings; set aside to cool.
Whisk together mayonnaise, reserved drippings, shallots, basil, vinegar, and sugar in a large bowl; season with salt and pepper.
Stir in pasta, romaine, tomatoes, and bacon; toss to coat. Season with salt and pepper.

Mmmmm.... Sounds good! I've made something fairly close to that, with the addition of small cubes of sharp cheddar cheese.( I am from the dairy state ).

I've done that with an adaptation of potato salad: lots of bacon (of course!), lettuce cups, and grape tomatoes tossed in my usual tattie salad (with mayo, Dijon, capers, grated Asiago).

I know Nettie, we've been resulting to that for about the past 6-7 years now. Nowhere close to the "real" stuff, but it allows Billie some sort of substitute. Of course, every chance I get when we're out, I'll order a double portion just to get my "bacon-jones" sassified!
