Re-freezing cooked meat
I have a 2 1/2 lb pork roast in my freezer that I may use as pulled pork. (I'll be asking all you fine folks about recipes for pulled pork but that will be a little later.)
Even as much of a glutton as I can be, there's just no way I'll be able to eat the whole thing even after a few days. So can I re-freeze about half of it after it's cooked without it turning the meat into something the consistency of cream of wheat? (Ugh)

Make sure to mark the date on it, and what it is, so it doesn't become mystery meat in the freezer. The Groundhog lied. |

OHR, Just like Nettie mentioned, yes you can re-freeze any meat when you cook it... It has now changed molecularly, so without going into a description that I might not understand towards the end myself at this time of night... In a few words, No problem, once cooked, you now have a different product. As for the pull type meat, let me know and will be happy to include my grain of salt into the discussion. Again as Nettie mentioned, for the conservation aspect in the freezer, make small portions (or portions that you know you will use rapidly once you pull it from the freezer), bag them into Ziplock type bags and try to remove as much of the air as possible, you can even use a straw to suck the air out. Better if you have a vacuum pack machine (sous-vide). I now do little into plastic containers for long term conservation, they retain too much air and the meat will dry and freezer burn rapidly, also they take up too much room.

Good advice from both, and definitely be sure to label the packages, unless you like to play mystery freezer surprise supper.
If you can't play by OUR rules take your toys and go home!!

Or just a bad surprise going straight to delivery... Imagine, you think that you are going home to a beef or whatever dish and you open this up and it is a liver done up weird from who knows who from which pot-luck party was that again!!!
