Coconut Cream Pie
Got this from the 1950 Betty Crocker cookbook and it is yummy!!! This recipe is for a 9-inch pie.

Mix in saucepan: 2/3 cup sugar, 1/2 tsp salt, 2 1/2 tbsp cornstarch, and 1 tbsp flour. Stir in gradually 3 cups of milk. Cook over moderate heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Remove from heat. Stir in a little of the mixture into 3 egg yolks, slightly beaten. Then blend into hot mixture in saucepan. Boil 1 minute more, stirring constantly. Remove from heat. Blen in 1 tbsp butter and 1 1/2 tsp vanilla. Cool, stirring occasionally. Pour into cooled baked pie shell. Chill thoroughly (2 hr). If desired, top with sweetened whipped cream. Take chilled pie out of refrigerator 20 minutes before serving. If adding Meringue, filling and crust need not be cooled. Cool finished pie at room temp (2 hr).
For whipped cream topping, beat 1/2 cup cream stiff, beat in 1 tbsp confectioner's sugar and 1/4 tsp vanilla.

Made this at Thanksgiving and it was a big hit Smile
