Roast Pork Loin with Applesauce...breath taking...
I found this one earlier in the Summer and made it to WONDERFUL results, but I knew deep in my heart this recipe should wait for Fall.
My personal recommendation? Make a batch of Applesauce (DO NOT OPEN A JAR!!!!) for one meal and save some for this recipe.
I had a batch of Applesauce I made for a meal that was lovely, tart and chunky, and it was heavenly with this roast. You won't regret the effort!

Looks nomtastic! But, what iffin' yer not homemade-applesauce saavy? Any suggestions?

Homemade applesauce is easy!
You need:
Apples
Water (or apple juice, which is what I prefer)
Sugar to taste (I use brown)
Spices to taste, I like cinnamon, a little ground cloves and a touch of nutmeg.

Peel and chop apples.
If you want chunky applesauce chop a little, you want smoother applesauce chop a lot!
Put the apples, sugar and spices in a pan and add your liquid (not quite to cover the apples, probably about halfway) and cover your pan with a lid.
Heat on a medium low-medium heat to a simmer and give it time.
I start this about an hour before dinner to give it time to cook.
Stir occasionally so it doesn't scorch.
Add more liquid as needed if you run out of liquid before you get the sauce consistency you like.
You can smooth out your applesauce with a potato smasher or put it in a blender if you don't like the consistency.
WHA-LA!!! Applesauce! Easy-peasy!
