Scallop/Shrimp Ceviche with plantain
Pairs well with caipirinha.Wink

1lb raw scallop
1/2lb raw shrimp
1/2C grape tomato
1 or 2 serano chile veined, seeded, and minced
1/2C chopped fresh cilantro
1/2C red onion finely minced
Salt to taste
1C fresh squeezed OJ
1/3C fresh squeezed lime juice
1/3C fresh squeezed lemon juice
3T unsweetened coconut shavings

Mix it all in a non reactive bowl and toss it in the fridge for 6hrs to "cook". Then serve cold.

There's no wrong way to prepare ceviche and there are probably as many different ceviche recipes as there are kindly abuelitas in Mexico. You can go nuts with whatever ingredients you like as long as you let the citrus do it's job before eating.
