Oven-dried cherry tomatos
As harvest approaches, questions arise as to what to do with all the tomatos. (note the Canadian spelling) Here is a simple recipe to prep cherry tomatos for either eating by themselves or, better still, as a BBQ pizza topping:

3lbs or more cherry tomatos, washed then halved
1 bottle of garlic-infused olive oil (you will not need the whole bottle)
Italian seasoning
dried chili powder (I use Morita Chipotle from EVOOlution.ca)
any other spices, to taste

Place tomato halves on a lightly oiled jelly roll pan
Drizzle with additional oil and spread with brush
Add copious amounts of Italian seasoning
Add additional spices as you prefer
Set oven to 200F or so, and let them dry for several hours. It is not uncommon to require 8-12 Hours, so start them in the morning of a day-off.
Once finished, keep aside any for eating that day, but pack a wide mouth jar tightly and cover tomatos with a layer of olive oil and refrigerate.

This isn't a real 'recipe' and you will have to 'wing-it' every time.

The tomatos will be needed for a recipe for BBQ pizza that I will post in the near future.
