Aye!

Did a 5 day accelerated course at the Culinary Institute in St Helena back in Jan. Day 4 was baked goods(which I've always been a little intimidated by) and I've been doing double cardio every day since trying to maintain some sort of caloric balance. In fact, I've done a pretty good job of strictly limiting flour and sugar over the last 15yrs and now that's all utterly and totally out the window lol.

Understood!
Fooling around in the bakery is one thing but getting serious could be very intimidating.

And yes, that balance in the diet is in danger when taking one's cooking/baking seriously. After all, one NEEDS to taste one's work to learn.

Not too shabby.Big Grin

The flavor combo of haloumi/sourdough/evoo reminds me a lot of cheese borag.
