Caprese
One of my favorite things to make as an appetizer (that's easy) is Caprese. I've tried different things in it and have ordered it while out. Some places just have peppers, fresh mozzarella some basil and a splash of balsamic vinegar and olive oil.
I get a serving plate and pour the vinegar and oil in 1st. Then I get some pepper, garlic, and oregano and sprinkle some on. I cut the peppers (roasted red peppers) and place slices of mozzarella on top, then cut up some tomatoes and (never saw anyone do this) then top it off with some cucumbers. I get fresh basil and use scissors to cut the leaves in small pieces. THEN, more oil and vinegar and sprinkle some Lucatell Cheese on top. I put it in the fridge until ready to eat. Like I said, it's easy and it's very good. Enjoy |

Once in awhile we will have a side dish of Italian influence : on a deep sided plate/dish put fresh squeezed lemon juice ,good olive oil drizzled over top, fresh cracked pepper and sprinkle of salt on top of the juice & oil. Then use pieces of a nice hearty crusty bread swiped thru and eat. Quantity of ingredients kinda plays on your individual tastes. We like it a bit tart so we juice a whole lemon. It's a nice quick and simple appetizer and goes well with a nice glass of wine.
If you can't play by OUR rules take your toys and go home!!

Since I have to cook for a large crowd on a regular basis, I like to do caprese as a bowl salad instead of on a plate.
I use different types of tomatoes for contrasting colors, cut up into "one bite" chunks (or cherry tomatoes simply sliced in half) red onion sliced very thinly, basil snipped into ribbons, fresh mozzarella cut into chunks, and then a simple dressing of balsamic vinegar, olive oil, and a little crushed garlic. Stir it all together and enjoy. It’s much easier to serve to the buffet crowd and very yummy. "This is a standard queen outfit, then?" |
