Reusing the oil in my deep fryer

RE: Reusing the oil in my deep fryer
My first job was in a fried fish restaurant and we used peanut oil. I'm sure given the number of people with severe alergies to it that its popularity has declined at least commercially. It was used by us because it allowed all of our products to be cooked in the same oil. Peanut oil does not transfer tastes. We cooked fish 7 chicken in the same oil along with some other foods and had no problems. It was very expensive and we usually replaced it weekly and filtered it with a thorough fryer cleaning daily. The other suggestions about when to change it are good in that the colour of finished product darkens as it ages and collects contaminants. I would also agree that stored used oils are usable until they get a pungent smell from being rancid.

I would caution folks to refrigerate the oil after cooking meat, poultry or fish. I sure wouldn't leave it on the shelf in the cupboard for 6 months after using it for meats or fish....

BP’s oil spill has made us mad as f-- - and we’re not gonna take it anymore. We created this website, t-shirt and video because we are tired of seeing images of oiled birds and yelling at the TV... and we know hundreds of thousands of you out there feel the same way. With all the righteous anger that’s been flowing like crude oil into the Gulf, we wanted to do something positive and help. The charities we are supporting are doing awesome work and we hope you will give them a helping hand as they clean this f--king mess up. Together we can clean up the Gulf... one dirty word at a time.

I feel your pain e but don't misquote me....even though your aim is true you don't need to do that....just sayin'....And it looks like I'll have another t-shirt to add to my growing collection. I'm glad that I can
f--king pitch in from the oilsands to the oilspill.

Sacred cows make the best hamburgers.

I bought a doughnut and they gave me a receipt for the doughtnut... I don't need a receipt for the doughnut. I give you money and you give me the doughnut, end of transaction. We don't need to bring ink and paper into this. I can't imagine a scenario that I would have to prove that I bought a doughnut. To some skeptical friend, 'Don't even act like I didn't get that doughnut, I've got the documentation right here... It's in my file at home. ...Under "D".'
