Pad Thai
My very favorite meal is a Pad Thai, the national dish of Thailand.
I was first introduced to this wonderful dish when attending Massage College in Sutton Ontario, on the south shores of Lake Simcoe, in 1994 to 1996. We would go to this place called Tigers, where Souwan, would make her homemade Pad Thai for the students...man I loved her Pad Thai the best.

There are as many receipes of Pad Thai as there are regional districts in Thailand.

My advice is go to a local family run joint, if you can find one and order Pad Thai, you will not be disappointed.

If you attempt to make it, a few hints:

Don't overcook the noodles. Put them in hot water, and as you prepare the other ingredients they should be ready.

Don't skimp on the peanuts and make sure you crush them good.

This dish is all about a medley of textures. Crunch from peanuts, bean sprouts. Chew from scallions, whatever meat you have, soft from the tofu, etc.

The sauce recipe is as easy as it comes. Equal parts of the following:

Simple syrup
Fish Sauce
Rice Vinegar
Tương Ớt Sriracha - hot sauce - actually you can use less of this. mix the other ingredients together and give a couple healthy squeezes of this. more or less to taste.

All you need is to *find* Thai tea... Some Thai restaurants will sell you the leaves. Brew the tea (4 1/2 tbsp.to one coffepot full of water ) with some star anise seeds. Make a simple syrup (1 part sugar to 2 parts water) mix the brewed tea and syrup and chill. Fill glass w/ ice and top with AT LEAST light cream (I prefer heavy cream and half & half don't taste right) I found 14 oz. bags of semi-ground (kinda like what tea in teabags look like) tea with the star anise already in it at my local Asian market. They also sell an instant powder (with or without cream & sugar)

I would add that a nice dose of fried egg is essential in there too. My significant other was born and raised in Thailand, and when she isn't cooking the most mind-blowing food imaginable she's continuing with the Grand Tour of Los Angeles ran-ahans. In every instance where I've been bowled over by the Pad Thai, it's got lots of egg; if it ain't in there it's a massive letdown. I've come to think of those fried egg bits like gold nuggets in a stream placer - the more and bigger, the merrier.
