Caramelized Shallots and Garlic (side/topping)

If you can find a nice, fleshy medium-heat pepper, try roasting and peeling it and adding it to the topping list. Maybe it's just me but I'm always on the lookout for a good green chili cheese burger. I also like the idea of "sandwiching" the burger around the cheese.
Sacred cows make the best hamburgers. I bought a doughnut and they gave me a receipt for the doughtnut... I don't need a receipt for the doughnut. I give you money and you give me the doughnut, end of transaction. We don't need to bring ink and paper into this. I can't imagine a scenario that I would have to prove that I bought a doughnut. To some skeptical friend, 'Don't even act like I didn't get that doughnut, I've got the documentation right here... It's in my file at home. ...Under "D".' |

It wouldn't work as good as a Sandia, Big Jim or Anaheim. They are a little sweeter than a J and not prone to be as hot...generally speaking, because all peppers vary in heat even among like batches. I love my jalapenos, the Model-T of peppers, but not in this instance. However, if that's all you can get, go for it. And I always de-seed my peppers after roasting when using them as a topping. I don't want the heat to everwhelm the taste.

Here's a pic of the burger version. This is what I made for Mothers' Day.
Grilled hamburger topped with melted bleu cheeses (Danish), Caramelized garlic and shallots, and roasted Anaheim peppers. ![]() Thanks for the Anaheim pepper suggestion Brutus. It was the accent to make the perfect burger. |
