Mashed-Potato Spring Rolls
Cooking time around 30 minutes. Makes 4-6 servings.
Ingredients: 16 slices of packaged white sandwich bread 1 cup mashed potatoes 1/2 cup thinly sliced cooked green beans 1/4 teaspoon togarashi or cayenne pepper Kosher salt and freshly ground black pepper 1 large egg yolk mixed with 1 tablespoon of water 2 cups vegetable oil (for frying) Warm turkey gravy and Sriracha chile sauce (for serving) 1) Stack the bread in 4 piles and trim the crusts. Using a rolling pin, roll out each bread slice to a 3 by 5 inch rectangle. 2) In a large bowl, combine the mashed potatoes, green beans and togarashi and season with salt and black pepper. Brush the edges of 4 bread rectangles with the egg yolk mixture. Shape 1 tablespoon of the potato mixture into a log along a long edge rectangle, leaving 1/2 inch on each end. Tightly roll up the bread to form a cylinder; press the ends together to seal. Repeat with the remaining bread and potato mixture. 3) In a skillet, heat the oil to 325 degrees. Add half of the rolls and fry, turning occasionally, until well-browned, about 1 1/2 minutes. Transfer to paper towels. Repeat with the remaining rolls. Serve with gravy and Sriracha. |

I have got to try this recipe! Did you invent it yourself or find it somewhere? In some ways it defines "Bubba-Food". White bread and mashed potatoes. But you then take it to a whole different level with Japanese togarashi and Thai Srirachi. A whole new fusion...Let's call it it Bubjapathai.....And then serve it with gravy? I've got to know how you decided that all these disparate influences would work together. Wild. I had to do a double take on your name. I don't know what I expected but THAT was not it. Sacred cows make the best hamburgers. I bought a doughnut and they gave me a receipt for the doughtnut... I don't need a receipt for the doughnut. I give you money and you give me the doughnut, end of transaction. We don't need to bring ink and paper into this. I can't imagine a scenario that I would have to prove that I bought a doughnut. To some skeptical friend, 'Don't even act like I didn't get that doughnut, I've got the documentation right here... It's in my file at home. ...Under "D".' |

This sounds like something I would try at about 2 in the morning after a gig or just a late night of partying. I will try this one, kind of like a whacked out twist (no pun intended) on a hot turkey sandwich. Definitely a 'blue plate special'. Brilliant!!

I have been receiving Food & Wine cookbooks for a few years now (a gift from Delta Airlines for spending WAY too much for a trip to Rome a few years ago) and I am a wanna-be cook. I try recipes all the time, and this is one I tried after a gig in Cincinnati a while back. I loved it and HAD to share it!! I will be posting more soon. Happy eating!!! |
