Taco's of the Sea

As this is not really a "fish" taco...I had to alter the subject line appropriately.

Scallops - over low heat on the grill. Just stand there and keep turning them. Always turning them. You'll know when they are right.

Corn tortillas.

Pepper Jack Cheese.

Jalapenos.

A little cilantro.

A squirt of lime juice.

Maybe a dash of a "cole slaw" dressing (NOT Ranch dressing) if you need a little sweet/ tangy on top. But if you get the right scallops, you won't need the dressing.

Wash down with steady and frequent interval using Pacifico and a squeeze of lime.

Prop up the feet. Close your eyes and use the power of solar digestion.
