Puerto Rican Rice and Eggs (Sunny Side Up)

Hey everyone,

In suppose noone dug may last post about Italian antipasti. You'd have to come over and experience it to truly appreciate!

In any case...

I married a gal with Puerto Rican stepmom who can really cook. Here is a very quick and delicious meal! It's a snack really but can be a nice supper...

1.White rice prepared the way you like. (Yello rice can be substituted)
2.A couple of fried (butter or oil) sunny side up eggs placed over the rice.
3.Serve with salt to taste.

I would imagine this may go well with Corona and fresh lime.
