Grilled Beef Tenderloin Injected with Cognac Butter
½ cup melted unsalted butter
¼ cup cognac
1 Tbsp chopped thyme
1 (whole) beef tenderloin
2 Tbsp olive oil
Rub (salt, cracked pepper, garlic, basil)

In a bowl mix together melted butter, cognac and thyme. Fill injector with mixture and inject into tenderloin in several places. Cover meat and refrigerate. After a couple of hours, remove meat and let sit at room temperature. Brush meat with olive oil and apply the rub mixture. Grill using your preferred method, gas, charcoal, wood..............
Sautéed mushrooms with a cognac reduction can be poured over the grilled tenderloin if desired.

I'm making a Pork Tenderloin for dinner tonight. I don't have any Cognac on hand to try this recipe but I will give it a shot on the next one! Sounds very good. Thanks for posting.

Sounds absolutely fantastic. I'm a big fan of the old-fashioned method of cooking a tenderloin of jamming some garlic cloves into little slits sliced into the beef, dousing it with red wine, adding a healthy dose of sea salt and black pepper, and roasting it the oven.
