Vegetable Beef Soup

Vegetable Beef Soup
Ok - this is one of my favorites.... cheap-fast-last a long time and not a lot to clean up.

Grab the biggest pot you have that will fit onto one burner.
This will feed about 6 to eight hungry people.... or me for three or four days.

1 lb ground beef
4 cups water (more if you actually like "soup" to look like soup)
1 can diced tomatoes / drained
3 medium carrots / sliced
4 medium potatoes / peeled & cubed (or make little, tiny potato balls if you are really bored)
1 medium onion / chopped
1/2 cup celery (this really adds taste to the soup)
4 beef bouillon cubes
1 1/2 teaspoons salt
1/4 teaspoon pepper
1/4 teaspoon dried oregano
1 cup frozen green beans
1/2 head cabbage

* Add tomato juice as needed, or even beef or chicken broth until you're all happy up with the results * (as Justin Wilson used to say)
Also - items can obviously be added or subtracted to your particular tastes.

Brown yo' beef (drain it if you want - I leave de' drippins' in dea')
The great thing about this stuff is that you can also dice up and toss in that leftover chicken breast, or those two pork chops from last nights dinner. It's all fair game in the pot.

Add the rest of the junk into the mix and bring to a boil.

* Now it is recommended that you add the beans and cabbage in the last 15 minutes of boiling... but I have tried it every way you can - and it still
tastes just as good... no matter what you add first or last.... your call. *

Now I always toss in a palm-full of "Cajun sumpin-sumpin"... "Old Bay" seasoning or your favorite Cajun/Louisiana dry seasoning really wakes this soup up.... again - your call.
I will tell you that adding a slice or grated handfull of your favorite cheese will also make you feel really good about life when eating this concoction.
It only gets better on the second and third day of sitting in your fridge.
