Fresh Grilled Corn On the Cob w/Sauce
Start with FRESH corn on the cob. You can soak if you like, but I just husk it and throw it on the grill. You want grill marks. Time will depend on your grill, so watch it carefully, turning to evenly distribute charring.
For the sauce:This is a basic technique and any herbs, spices etc can be used; Mayo, dry white wine--fresh lemon or lime juice Herbs/spices: Rosemary, thyme, oregano, basil, onion powder, garlic powder(fresh garlic works well too--minced) cumin, paprika, cilantro, etc. Choose the family of spices that will best suit the main dish. Pictured is the Italian version: Rosemary, thyme, basil, onion powder, garlic powder, fresh cracked pepper, kosher salt, parsley, dried tomato For the southwest version use lime instead of the wine to dilute the mayo. I eyeball everything, so no measuring here...sorry. Once the corn comes off the grill, drizzle your sauce over evenly... Alternately you could flavor melted butter with the seasonings.... Enjoy! |

I have somethink similar that I sort of do backwards from that.
take corn, peel away the husk but leave attached to the cob. clean off as much of the silk as possible (unless you like having an impromptu teeth-flossing while eating )melt approx 1/2 TBSP butter per ear, into that, I used a concoction made by a local guy called Dr. Gonzo's Garlicmash Alternatively, some garlic powder, cayenne pepper and a dash of saltwould work as a substitute. also a good sprinkle of parmesan cheese. mix together, then slather onto corn. Pull the husks back up, tie in place if needed with plain old kitchen twine. cook on grill till done. om nom nom. |

That also sounds good...sometimes I take unsalted butter (not melted), fresh basil, parm cheese, kosher salt, pepper and rub it on the ear before grilling...yum
I have also mixed southwest spices into the butter with lime and grilled on the corn. The nice thing about this sauce, is you can put it on frozen corn too... |
