![]() ![]() ![]() I have a great stuffing recipe that I have been using for a long time and it is fairly simple and really delicious. Ingredients: 1/2 cup olive oil 1 1/2 cups chopped celery 1 cup chopped carrot 2 cups chopped onion 2 pkgs breakfast sausage (pork) rolls, Jamestown or Jimmy Dean 1 lg can college inn chicken broth 1 14oz bag pepperidge farm herb seasoned stuffing cubes In a very large skillet heat oil and add chopped onions and cook till they are clear and soft. Add celery and carrots and cook for 3 more minutes. Add sausage and break up into small pieces as it cooks. continue cooking meat with the onions, celery and carrots until it loses it's red color. In a large bowl, pour stuffing cubes. Heat chicken broth to boiling and gradually add to cubes a bit at a time until cubes are somewhat softened. Allow cubes to sit for 5 minutes to absorb excess broth ( probably won't need to use all of the broth). Now add the contents of the skillet (meat and veggies), to the softened cubes and mix well. Allow to cool to room temp before stuffing bird. If you chose to bake stuffing seperately you will need to grease 2 or 3 loaf pans an dthen fill with stuffing - being careful not to pack too tight and bake in a 350 degree oven for approx 45 min. Enjoy!!!!! It is delicious Kathy |
