Apple Butter
I thought I'd share my recipe for Apple Butter, since its the season for such things. If you are a novice canner, (Like me!). this is a good recipe to get your feet wet with, since its really easy.

10 large (about 5 pounds) tart apples
2 cups apple cider
3-5 cups sugar
3 teaspoons ground cinnamon
3/4 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon ground nutmeg

Wash, core, and quarter the apples. No need to peel them.
Cook the apples slowly in the cider until tender. Blend in a food processor. You should have about 12-14 cups of pulp.
Add 3 cups of the sugar, then more sugar, if needed, to attain the desired sweetness. Add the spices and mix thoroughly.
Cook in a 350 degree F oven or slow-cooker for 6-8 hours, stirring often. (If you use the oven, it doesn't take as long, approx. 4 'ish hours)Test for desired thickness by spooning the mixture onto a cold plate. If no liquid oozes around the edges, it is thick enough.
Ladle into sterile jars, leaving 1/4 inch of headspace.
Process in a boiling-water-bath canner for 10 minutes. Adjust for altitude, if necessary. If the water-bath is too intimidating, apple butter can also be frozen.
Hope you like it!

Books got somebody writin' 'em and tryin' to entertain ya.
Life is more like a set of Legos.
Unless you take care of 'em, you lose a few pieces and you end up steppin' on 'em with bare feet.
You gotta take care of your life."
