Gazpacho
My birthday is in January, and Boomer got me to thinking about spicy stuff with his Pico request.
My mom-in-law rocks this Gazpacho, and she knows without asking that this is the one thing that I will request on my birthday. The recipe below makes four / one-cup servings: 15 oz can Hunts Tomato Sauce for meatloaf. 1 1/2 cups water 1/2 each - green pepper and cucumber, finely chopped 2 Tbsp each - pure vegetable oil / wine vinegar 2 Tbsp diced pimentos 1 to 2 cloves of garlic - crushed 1 -2 tsp crushed red peppers 1 1/2 tsp seasoned salt 1 tsp sugar 1/4 tsp each - cloves / basil 1/2 cucumber - sliced In a large pitcher, combine all ingredients except cucumber slices. Chill 3-4 hours if you're in a rush... overnight is better. Serve in a chilled bowl. Garnish with cuke slices. You signed the contract - you must do my bidding

Just curious - can you use olive oil in place of the vegetable oil? That would be killer for both my wife and I - she loves cukes and we both love tomatoes.

Lets just hope you don't LOOK like Sarah. That would be wierd even for my standards! (you know us sailors!)
We made the switch to olive oil about 8 years ago, and its just so much better. For You Steve & Monica - Your Love will forever shine on in our hearts!!!
