Stuffed Pablano Peppers!

Stuffed Pablano Peppers!
This one is easy (this was before baking)

Dawn located some beautiful Pablano Peppers at a market in San Antonio, TX.
She cleaned them out, grilled them for a couple of minutes after sprinkling with seasoned salt.

The filling:
Three large chicken breastseses / boiled (wanted to toss them on the grill as well - ran out of time)

Half a red onion (diced
1 can of chipotle peppers
3 diced shallots
1 tablespoon of cumin
1 pack of Mexican seasoning
Saute' the above in some EVOO with some garlic to your liking
Add your favorite grated cheeses and saute' until mixture combines

Stuff the Pablanos (don't overdo it like I did...)
Bake at 350 for 45 minutes (adjust per your heat range)
This was an experiment that turned out pretty well.

I believe you can do something similar with regular bells for those who aren't as pepper driven. We tried doing this on our grill last summer with just the bells. We didn't add the chipotles though, but we used red onions and salsa for the mix.

Sometimes when you are in a hurry - you skip little steps that makes the biggest bang. Thanks for sharing this!!!
