Gotta' love dem' Pralines Scythe! I used to love watching them make them down in the French Quarter...there was one Sweet Shoppe right down the French Market from Cafe' Dumonde that had a big window you could watch them pour out HUGE sheets of them. The smell alone would pull you in, but one free sample and you'd buy a couple of pounds!

I remember that place! They also made them at the Montleone, where my Mom worked. What a treat! Big Grin

An update on the divinity. It was the syrup. I made another batch today and it turned out great. I definitely did not boil the syrup long enough for that first batch.

Candy recipe

I changed four things that added to the success of this recipe:
1) I did not use a candy thermometer. Instead, get a small glass of ice cold water, and when you think the syrup is ready, drip a small amount into the glass. If it sits at the bottom, it's not ready yet. If it form a thread, and when you take it out of the water, immediately becomes hard, then the syrup is ready. This is the "hard crack" stage that the recipe is talking about. The syrup will need to boil for about 10 minutes before it gets to this stage.
2) Run the mixer at high speed after you add the syrup. It will take forever if you run it on medium high.
3) For a caramel taste, without much work, use organic cane sugar.
4) I did not use the nuts.
