Salt Potatos

Coming from CNY which was at one point called the salt city due to the enormous now polluted salt beds under Onondaga Lake and "Liverpool NY" Salt which was named for Liverpool England due to the fact they made salt as well! I figured I'd offer up the "Salt Potato. This is a regional treat I've mentioned it from Florida to Cailifornia and no one seemed to know what they are except ex New Yorkers", that being said here you go.
3lbs of small potatos you know the kind you use in stews so you don't have to cut them up. SEA Salt or Morton Salt (I prefer Sea Salt) 5 qt pot with enough water to fully cover the potatos add at least 1 cup of Salt to the Potato water mixture. Boil the potatos untill they are tender and there are salt formations crusting the pan. Melt a stick of Butter (Real BUTTER!) unsalted works fine. Plate 3 or four potatos pour a TBLS of butter over them and serve with your dinner. Caution this dish is not very good for people with high blood pressure, but it's great with barbequed anything! It's a Memorial Day tradition In CNY and our grocery store actually sells "Salt Potatos" with the salt included! "An Oasis of Solid Ground in an Endless Sea of Confusion" |
