Jamaican Sweet Potato Fries

While at the grocery store in the produce section I found the biggest sweet potatos I have ever seen, as I stared at these gargantuans I thought hmm.. these would make great sweet potato fries. I bought three of them home and searched my spice cupboard locating the Jamaican jerk rub I made for ribs. Then it hit me sweet potatos and jerk seasoning sounds like a winner. The family gobbled them up and informed me that the recipe was a keeper, so here it is!
Jamaican Jerk rub 1/4 cup brown sugar 1/4 cup fresh thyme, chopped 1/4 cup kosher salt 1 teaspoon garlic powder 5 teaspoons ground allspice 2 teaspoons cayenne pepper 1 teaspoon chili powder 1/4 teaspoon freshly grated nutmeg 1/8 teaspoon ground cloves Remove stems from thyme chop and mix all ingredients store in air tight container (I used Asian chili powder and cut the above measure to 1/2 teaspoon). Sweet Potato Fries Preheat oven to 425° 3lbs or 1 of those enormous sweet potatoes Olive oil If you like fries with the skin on just cut up the sweet potato into french fry sized strips. I peeled them my family has a thing about skins on food! Throw them into a bowl and sprinkle with a couple tablespoons of olive oil put the lid on the bowl and shake them up until all the strips of sweet potato are coated with oil. Open the bowl and sprinkle the Jamaican rub we made earlier on the sweet potatos, I didn't measure I just made sure they all had seasoning on them. Place into preheated oven for 18 minutes or longer until they are browned, this depends on how big and thick you cut the fries. Remove from oven once browned sprinkle a little more jerk rub on them, plate and serve with ranch dressing for dipping. Those fries are great... so is the jerk chicken that so dominates Jamaica.

I love sweet potato fries. I usually just have 'em with my homemade tempura dipping sauce (soy sauce, sake and honey) but will have to try your variation!
