Pan Roasted Chicken Breasts
I love this recipe because of it's simplicity...
Ingredients: 4 - Chicken Breasts (pounded flat) 4 Buds - Fresh Garlic (smashed) 2-3 TBS Safflower / Canola Oil 1/4 Stick - Unsalted Butter Fines Herbs (dried) Salt Pepper Method: - Pre-heat oven to 350 degrees (center rack) - Pound the breasts with a mallet until they are all of the same thickness - Heat an oven safe skillet - Add oil to hot skillet - Season breasts with salt & pepper (both sides) - Place breasts in skillet - Drop in the garlic buds - Sprinkle Fines Herbs onto the breasts - Cook for 2-3 minutes (or until nicely browned), then flip the breasts - Repeat the Fines Herbs - After 2-3 minutes, add the butter and allow to melt - Tip the skillet, and with a spoon, baste the breasts with the butter - Put skillet into the oven for ~ 10 minutes (check for doneness) - Remove from oven (Handle will be SCORCHING...be careful) - Baste one additional time - Serve Enjoy! |
