Easy Lemon Bars ( aka Cheater Lemon Bars)

I found this recipe and made it for my last family get together...

1 Yellow Cake mix
2 Eggs
1 8 ounce block package Cream Cheese- softened
1/3 cup White Sugar
1/3 cup Vegtable Oil
1 TBSP Lemon Juice *
2 tsp. Vanilla Extract

13x9x2 cake pan

In a bowl mix the cake mix, 1 egg and the oil until it has the look/ texture of wet sand. Reserve 1 cup setting it aside and gently pat the rest into the cake pan and bake at 350 dgrees for 10 12 minutes.

While that is baking place the cream cheese, sugar, the other egg, lemon juice and extract into a bowl and beat until smooth and creamy. When the 10-12 minutes are up remove pan from the oven and pour the creamed mix over the crust spreading it evenly. Sprinkle on the reserved cup of crumb mix and re-bake for another 10 - 20 minutes until it is light-golden brown.
Cool and cut.
I sprinkle the bars with powdered sugar before cutting them.
* I use fresh lemon juice, but if you want to cheat you can use the
bottled variety too.
