1 package of soft burrito or wraps
3 or for basil leaves 1 jar marinated artichokes 1 can black olives 4 or five scallions 3 oz shredded parmasean 1 red or yellow pepper cored and chopped 1 package sliced Monterey blue* 8 oz mushrooms 2 diced Roma Tomatos 4 or five slices imported Genoa salami cut into thin strips dash of worchestershire sauce 6 or more/less eggs depending on how many burritos you need to make! First get your skillet on the stove and heated up to warm. Now chop and dice artichokes(shake well there in oil)olives, scallions, peppers, mushrooms, tomatos, salami and basil. Add 1 TBLS olive oil or butter or no stick spray in the preheated skillet add all the chopped aforementioned and sautee lightly. While that's cooking place 1 burrito wrap per plate and place one slice of the Monterey Blue in the center of the burrito or wrap. In a 4 cup measuring cup beat the eggs add the parmasean and worchestershire sauce add to the skillet for the scrambled eggs. Take each plate with the wrap and cheese and microwave each one for 25 seconds (1200 watts) Top each one with the scrambled egg mixture and roll them up. Adjust the recipe for how many you're making Bon Appetite! This would work for dinner in a pinch according to my family! You can use egg whites or egg subsitute to decrease the calories and fat! This is not exactly healthy or diet savvy but it's very yummy! *Aldi.com had the sliced Blue Monterey I had never seen it before. It looked too good to pass up!
