Lazy Rice Salad

Lazy Rice Salad
It's another hot day today, too hot to steam up the house with cooked rice, so I made this to go with the hamburgers tonight.

2 containers(about 2 cups) Minute rice ready to serve brown rice
4 leaves of fresh basil
1 large tomato
1 large cucumber
Dressing:
the juice of 1/2 of a lemon
2 tablespoons olive oil
salt and pepper to taste

Peel the cucumber, core the tomato, and take the stems off of the basil. Then chop the vegetables, dump into a bowl with the dressing and mix.
Put in fridge for at least an hour to allow the flavors to mix.

and yes, you could make your own rice, just let it cool before you make the salad, or use leftover rice.

Sounds good, Nettie! I do the same thing with couscous, and it never occurred to me to use rice. DOH!

I guess I have seen this combination with couscous too, but I don't buy it any more. We're on a lowfat/whole grain kick(my sister and I), and we both tend to add a lot of high calorie oil and salt to couscous. My sister has been using quinoa instead, but I don't like it.

I'm not a big fan of quinoa either. I keep trying, but...meh.

Speaking of whole grain, I just saw brown rice pasta in Winco yesterday. Dry spaghetti, in fact. I'm probably late noticing it, but I think I'll try it. I'm on the whole grain kick too. My Dave's Killer Bread (The Good Seed) has so many seeds and stuff in it, it looks like it could sprout with a little soil and water LOL
