Potato salad
Hi out there!!!! Does anyone have a good simple recipe for potato salad?????????

Peel and quarter some potatoes, enough for the group you're feeding(3 or 4 large, 6 to 8 small usually).
Boil until just done(a fork slides through easily).
Boil 2 or 3 eggs(or "hard cook" them)

While things are boiling (or hard cooking), chop a small onion, 1 whole red bell pepper, and a couple(2, 3?) stalks of celery. Put in a large bowl, and mix.

Drain the potatoes, and let them cool.
Drain the eggs, and run some cold water over them to cool them off.

Cut the potatoes into cubes(or slices, whatever you prefer).
Peel the eggs(save 1 for decoration) and chop them(I like to use those egg slicer gadgets)

Mix everything in the big bowl, sprinkle with salt and pepper, and mix again. Put the bowl in the fridge while you make the dressing:
1 cup mayo or miracle whip...or half of each.
1 tablespoon yellow mustard.

If it doesn't look like there's enough dressing, add 1/2cup mayo and a teaspoon of mustard.
If it looks to yellow, just add more mayo.
Taste a bit. Does it taste too much like mustard? Add more mayo.


Mix it with the rest of the ingredients.
Does it look too dry? Make more dressing.
Taste a small spoonful. Does it taste like it needs more salt or pepper? more onion or celery? Add some more.

To make the salad look fancy, peel and slice the boiled egg you saved, and sprinkle a little paprika on each egg slice.

Sorry, I don't have exact amounts, but I never measure anything when I make this, except the dressing, and even then, I'm tasting and looking to see if it tastes or looks right.

Mine's pretty much the same but I add olives (green and black) and pickles (dill and sweet), chopped fine.

And you know... no raw onions for me Wink

... in a world where I feel so small I can't stop thinking big!

Close to my Grandmother's, but no mustard. She'd use a little milk to thin the dressing out and a little white sugar(1/2 tsp. or so). She said you couldn't figure exact amounts because it depended on the type of potatoes used and how they would absorb the mayo/miracle whip. So you might need more.
