Authentic? I don't know. But up here on the annual fish fry we start by rinsing the filet, pat dry, dipping the fish in flour, then egg, then a roll in Panko flakes, then into the fryer for a minute a side, then onto newspaper, eat!

Brits tend to use an ale in the batter - as in Beer Battered Cod etc....

Seems to me there's vinegar in there somewhere too. As in dipping afterwards, or sprinkling over the finished chips?

A nice malt vinegar to sprinkle over the fish and chips. I do remember hearing that they should be deep fried in melted lard for a authentic flavor.

Tried the beer batter last nite, used guiness, flour , eggs, salt and pepper. Turned out tasting too flour-ish... Gonna try Brians panko bread crumbs. See if I can get it to taste how I want it.

Bear - just a dusting of flour on that fish before the egg and panko flakes.
